Quality Control of Tofu Production Processes Using the Seven Tools Method

Tofu is a food derived from soybeans which then fermented to extract its juice. The problem that often occurs in the tofu industry products produced still have lot of defects. purpose this research identify types defects production and causes improve product quality. method used study seven tools method. Seven are 7 (seven) basic solve problems production. results process SB occurred 4 defects, namely unequal size, terms texture, mixed with dirt color. most dominant type defect size not same percentage 45.6%. This caused by human, machine, material, method, environmental factors.
